Switch rice and cous cous for bulgur

Bulgur has a mildly nutty flavour and is usually available in four grain sizes: fine, medium, coarse, and whole grains. The different sizes are used for different purposes ranging from breakfast cereals to desserts, vegetarian burgers, casseroles, stews, soups and salads.

Bulgur contains little fat and is a good source of protein.  It contains B vitamins, iron and magnesium.  Approx 100g of unprepared bulgur contains an impressive 8 grams of fibre.

It is a good alternative for rice and couscous as it contains more fibre and has a lower glycaemic index than these options.
